How difficult would it be to switch from MySQL to another database, say Postgres or another. I see that MySQL is fairly entrenched in the codebase. Would supporting others be a large undertaking?

Depends. I think switching it to MariaDB might not be that hard. Postgres I am not that sure how many things are different there
