Soo, for playerbots you need to use different source code. If you just read the module github page its clearly says you need playerbots fork of AzerothCore.
When it comes to other modules, simply download or clone it in to modules folder that reside in AzerothCore main folder.
You need to reconfigure your build with CMake and build core again.

There is nothing wrong with running a Linux VM. Calling people that for doing that is not OK.
