Hypothetically, if I ran queries in HeidiSQL for modules and did complete bonker stuff, would it be possible for the authserver and worldserver to just crash on startup / not even start?
If that is the cause, how can I revert that?

Yes it's possible but it'd normally tell you what's wrong in the terminal or crash logs so have a look there
