Hi guys, it's been a few years since I set up my own Acore server so I'm pretty much starting over fresh. Is it possible to set up a server just for myself and have a party of 4 bots that I can gear up along with my own character? Maybe even make my own alts into bots? Is that a thing?

You can, there are a couple options. You can use the playerbot fork and mod to have your alts as bot (or randombots). There is also NPCbots module that requires its own fork of acore. I only have experience with playerbots myself.
