Can I simply download the latest of the normal branch and recompile to swap back?

I'd say yes, better make sure to back up the database first

doing so is a bit messy because playerbots creates bot accounts and characters in the acore_auth and acore_characters database, and adds some tables of its own. without the code to use them, tho, there shouldnt be much harm in them being there
