So for fishing you'd need .learn 51294 and .setskill 356 450 450 to learn Nortrhend fishing, taken from this list https://www.wowhead.com/wotlk/skill=356/fishing#spells

No there's no stock commands tiered per expansion, it's only ".learn all recipes <profession name>" or nothing

I just started playing Azerothcore and have been using mod-playerbots, you can summon bots to group with you, and mod-ah-bot to put some random stuff on the auction house, im not very high level but has been fun so far.
