The client will only read one MPQ, since both contain "the same" model, it can only use one.
You'd have to put the slow stealth UD Male model into the race swap MPQ and replace the one it's using.

You'll have to extract the m2 for the UD Male from the slow stealth MPQ, then add it to the race swap MPQ and replace the current UD Male model file (m2) in it.
I think you can do this with Glitchy's, if not, use MWCS (My Warcraft Studio) .
It's pretty simple tbh, even if it sounds confusing (:
It's just taking one file out of a file, and putting it into another file.
