im just not sure where to start, seems to be many vanilla wow server cores out there

There are a few vanilla cores, the ones that come to mind are cMaNGOS and vMaNGOS. The 3.3.5 client and azerothcore though, there are a few progression modules out there that you can use to get code that you want for your own server. You may need to do some work yourself but there is a lot already available.
