First of all i would recommend you using anything than notepad to look into any type of configuration file. Either use notepad++ or visual studio code, both are free and light and allow you to search partial and anywhere in the file instead of specific either up or down from your selection.
I do not recall having a world config setting to change how much you gain for an node of whatever profession

It's not as simple as changing a simple value. You'd be changing the drop count of all nodes so that would mean a lot of edits.

You would need to find the whatever vein or herb spot (name) for that gameobject and increase the min and max for the loot it drops.

That's all instances for copper ore for instance. That's just copper too, which is why it's not a simple "flip this switch and magic we have 1000 copper per vein"
