Some players are like complaining that they lost their recipes of professions, so i unlearned them professions and learned them again by a prof npc ... So What are these errors what ?

Last time I had a skill issue to the point the game kept telling me they had duplicates entries (even upon deleting the skill) and creating a sql error therefor not saving progression, I had to remove any spells they had (this case dual weld), remove their skills in the database, pdump their and restore the pdump to the same account. Not the same issue as you but could be the same solution

But for you case Maybe reseting the their keybinds I think is what the char actions is should fix it

It should work fine, if you use the command .unlearn or if they use any trainer the game should save them automatically. So there won´t be problems

I've had a similar thing happen. I tried to .unlearn a mount but relogging brought it back. Could very well be what screwed is saying.
