if anyone else ends up with a similar problem (this is for the Windows Gitbash method, so this obviously won't work on MacOS or Linux):
Install Chocolatey if you don't have it already.
Do step 1 (cloning the source) if you haven't already.
Go to your git folder, enter .../azeroth-wotlk/apps/installer/includes/os_configs.
Open windows.sh **with a text editor. This is very important. We do not want to run the script.**
Copy rows 26-29, and paste them into an **administrator** PowerShell window.
Install CMake separately.
(You could probably install CMake with the rest if you run the command part of row 17 first, then rows 25-29, but I haven't tested this so I have no clue if it works).
Proceed with the rest of the setup.

Wait what? I've been doing that because I thought you had to reinstall the core from scratch every time you wanted to install a new mod.
