AC doesn't provide help with the Playerbots. In their github for any issues. Related to the general question, in the cpp code of that instance you can change many things.

I don't know how to get the GUID withotu doing it in game via .npc info.
adding that GUID and a model id to the mount and byte2 if you want him to have a weapon out
