Dont have any addons or modifications aside from being swapping blue buttons for red ones in the the main menu, and instance maps

Well it's good to see it's not limited to just me. But, in the 2 videos you posted above, there is no circular tower top with missing faces.

For the most recent one i would assume blizzard learnt or wanted to fix those issues (as people have more powerful pcs) and i will check my vanilla and tbc versions to see if this only happend in wotlk

Because screens were smaller, people didnt had to have max fov for the camera either, and people didnt use to look higher camer angel
