I also did maxed mining on a separate AC realm prior to the node update and that took me less time than 225 mining

Has the structure of the new and old pool_templates changed? And I changed the code but didn't change pool_template, so it's likely that there was an exception in the recent AC update, just my guess.

I agree, but such a drastic increase in node scarcity when it has never felt that scarce in any other WoW server (official or private) I've played in the last 6 years or so is definitely noteworthy
