I'm running azerothcore on Debian 12 on a mini-pc, do you think I could also run pi-hole and a dhcp server off of it? Or would that impact my ability to play WoW?

I doubt it... Unless you're doing an ungodly amount of filtering in pi-hole, you should be ok. Once upon a time used to run my 3 worldservers from a celeron based NUC

I mean, for a low pop server (without playerbots of course) you need very little in terms of performance

Totally. I've used the docker builds for synology NAS and they work rather well.
