As for changing the color, from what I understand, just open the .tga file you have in Photoshop or some similar program and change it's Hue/Saturation/Lightness to the desired color.
Then save it as a NEW .tga file and load it from there into a duplicated .mpq file of the original edit you made (when in doubt, never change the original file).
As I don't know much about model editing, this is the best i can describe it.
But since what I described doesn't sound deconstructive to the overall info (you'll end up making a new .tga file and a new .mpq), then it shouldn't hurt to try.
However, I would also suggest to wait for 1 more person who knows a bit more about this to critique my description.

The texture for the wings can be found in the Spells folder of Common.MPQ (but you probably knew that) I think it's called "Wings3.BLP" or something.

I'm not sure if this will help you since i never changed spells succesfully (for some wierd reason every spell looses its name and animation)
