I have MaxPrimaryTradeSkill = 10 in worldserver.conf. After learning 2 in game, I can't learn another. The button to train another profession is grayed out at the trainer. Is there something I'm missing, or is there another work around I should be using to learn more than the standard 2?

Ok, think I get it now. From my reading it looks like Cataclysm interface can't handle more than 2 primary professions, but can be worked around with commands and macros in game. If I'm wrong, please correct me.
