You can right click on a folder and use git bash and use a command to clone a repo, or you can use github desktop application (you don t need an account)

Open github desktop then on top left file, clone repository
First link is the github repo you want to clone
For azerothcore : https://github.com/azerothcore/azerothcore-wotlk

Second path is where you want to clone it, for exemple c:\azerothcore

When you will have an update of the core you will see an arrow on your folder on git desktop and you will just have to "pull" and build again.

There are also "modules" for some custom content if you want on their catalogue, these kind of stuff also exist with TC but a bit less beginner friendly to add them imo
