Use a program to work with mpq archives like Ladiks MPQ Editor.

Create a new MPQ archive with it. Name it patch-m.mpq

Put into it the ported mount files keeping the directory structure that the mounts came with.

Put this mpq in your wow client folder, inside Data (you'll see other patch mpq files there)

Using a dbc editor like WDBX Editor, open the .dbc files you listed above (they can be found in your servers data folder where ever you put them)

In CreatureModelData.dbc, create a new row and fill it in for the mount you are adding. Use the wiki I'm not explaining every column and their meanings.

Do the same for CreatureDisplayInfo.dbc to create a display ID for that mounts model. I'm also not going into detail here because I'm not typing all of that out.

After editing the dbc files save them, then create a new folder in your custom mpq called DBFilesClient and put a copy of your modified dbc's in it

If you want to create spells to use the mounts look up spell editor tutorials and look at existing mount spells I'm not going into that here either
