White textures is often because the texture is not hardcoded and needs to be assigned in CreatureDisplayInfo DBC

Atm they look like escaped goo pixels, some mobs looks weirdly alright with broken textures

I always assumed the highlighting system just sets the highlighted model to something akin to fullbright, and this seems like proof of that.
