Haven't actually seen anything like that, and it seems that the client just doesn't receive enough info to make it accurate, especially for containers not in object manager currently. But I'm not too familiar with how the game internals function, so it might actually be doable?

I'd guess the loot list would only get send to the client when the actual opening of said container is done already. And the player could then cache that clientside but that would be no guarantee that nobody else would have taken out any item.
If that is the case, you would have to implement custom packets (or at least addon messages) that would send loot info to each nearby client (also updates when something is taken out etc)

Exactly what I thought. It'd be possible to do it lua-side for pure solo play and probably *nearby* grouping also, since, iirc, the game forces player to target what they loot atm (no chests and such, unfortunately), so you can parse chat_msg and retrieve guids for 'groupmatetarget' while at it. Shame to see this kind of implementation being *almost* decent enough.
