Well, I wouldn't describe it as being broken down into data chunks, more an hex editor will show where these chunks are, for example, one chunk is called "MODF" though not relevant to what you want exactly, it's just an example, you can search for that inside an hex editor, or there might be a 010 editor template that'll do a chunk enumeration for you and list the different chunks, and their information. Anyway, look into how to get an offset from an hex editor. Regarding WoW, there are plenty of people on Youtube who explain opening files in hex editors for this purpose.
