My main goal is to make a custom server just to have fun, creating a completely new map and texturing since I love creating stuff

A repack is probably not the ideal solution for that (since you need to e.g. recreate all maps, vmaps and mmaps for custom maps. I'm not sure if they include their extractors in that repack).
Even if you don't code, i'd recommend to try to use a "normal" version of the WotLK emulators. These will obviously miss the singleplayer stuff this repack has but will allow you to operate it as you want

The community also offers a lot of modules that you can install on the server pretty easily. Maybe they also offer some singleplayer module aswell
