As an alternative example, adding a new entry in Graveyards DBC on the client folder would override the client's DBC because of the above mentioned dependency which is not linked

its showing that its trying to read the extractors now but shows 0 dbc loaded -_-

there's no single place documenting all this, no, and the times that the server can override data in them it's mostly down to the calculation being done serverside, like damage values or teleport locations

client dbc files are, from what it seems, just raw SQL dumps into a binary format for the general tables blizzard uses that has _some_ use in the client itself. It doesn't really filter out columns that the client doesn't strictly need.
