That's handled in CharBaseInfo.dbc primarily. You need to add the entries for each class/race combination you want to add. Then you'll need some DB edits like playercreateinfo and player_levelstats I know are both needed. I forget exactly but I think any others would be under the playercreateinfo section of the DB. (For Trinity but I think Azerothcore is pretty much the same in this regard.). Then there's some other stuff that's optional but recommended if you want to make it fully Blizzlike, like charstartoutfit.dbc handles starting items and the armor displayed in character create. That might be the only other DBC you need but it's been a bit since I tinkered with it so I'm not 100% on if there's any other tables I'm forgetting.
