Are there any examples of scripts that enable quests to be accepted by a given player in TrinityCore? Or any other methods that could achieve the same result?

Just trying to figure out the best way to go about allowing a player to accept a quest after a script has been executed (due to them completing a task not related to questing in itself - say, crafting any item for the first time. Or, perhaps the quest is to craft an item - which becomes available when you first learn the related profession), without forcing the quest onto the player.

My first thought is to make an empty pre-requisite quest and just complete that quest for the player when they complete X task, effectively enabling the second quest in chain which requires it, but I feel like that's messy and there may be a more direct way to enable the quest (without auto-adding it or popping up a quest prompt, nothing invasive)

Do thing, apply hidden permanent aura to player, use conditions table to make the quest require that aura on the player. Done.

Your version with a hidden quest sounds perfectly fine

What's wrong with the applied aura for the player? Assuming the aura is removed after completing the quest

My way won’t scale at all. Aura cap likely. But will work.

I mean the quest -> quest thing seems more natural, but I'm curious

It's way more expensive applying, removing, lookup auras.
