Except I had a change of models and I haven't had the issue since, so I don't know why it was happening then and not anymore

Okay, after some deeper looking, the model in question has 33,798 triangles, too many for WotLK to handle apparently. I’m going to try reducing the total poly count and IF this solves the error then I will update the wiki for 0x00684527
