Does anyone know why TrinityCore would display my shield's armor value as a green (as if it's bonus armor)?

Yes, we had this issue a while ago, but I can't remember how we fixed it, pretty sure it had to do with a wrong item template entry

I found it, some obscure mangos forum post said it was basically an invisible armor bonus

using ArmorDamageModifier field in item_template

I thought it displayed in the armor value so I wasn't finding anything different between the armor values of the shields I was checking, but sure enough, ArmorDamageModifier was set for the green one

You can use recast debug output to view the mesh generated, but mmaps is not perfect with the same settings on every map. TC actually hardcode in the working settings for different blizzlike map ids into the program. It's a bit of trial and error until you find the best settings for your map, viewing the mesh each time
