My understanding, the best Blizzard can do is to detect the installed and running exes to check if the sniffer is installed or running, so, if I am running the sniffer on another machine, and use that machine as a side router to proxy all the traffics of the machine that runs WoW, I am totally safe right?

the sniffer has to read memory on initial connection, thats why your plan doesn't work entirely (and yes, technically thats also the point they could detect it)
