in general its recommended to start with scripting, e.g. some trash mob and then work ur way up to dungeon bosses, raid bosses [...]
as soon as you are quite confident with the code base you could tackle more core things

theres no documentation about it pretty much, we only have some documentation about the database tables over at https://trinitycore.info - but not about scripting itself. "Code is the documentation" pretty much
