Would updating AzerothCore-wotlk-with-NPCBots be the same method as the base repo? If so, should I be backing up /env/dist/etc/* and the DB (does the update overwrite these)?

yeah, it should be close enough to the same method, though be away that it's technically a different repo than the main one and I don't use it, so I don't have a full answer
I don't think it'll be a problem, but it's a good idea to get into the habit of backing up even for routine updates.
