So, what could really happen to me? I find it quite odd that as a private individual who hasn't committed any wrongdoing, I might be held responsible for damages caused by some internet scoundrels.

Port scanners may scan the ports of you server, which is purely automatic unless they decided to target you specifically. I suppose ddos could happen if someone wants to be an asshole and your server is advertised. For SSH I'd say don't use passwords but private keys not hosted anywhere anyone could ever get to them and there's really no chance anyone could log into the server. With good security for anything publicly available, like SQL, I don't forsee that ever causing a problem. I don't know how or why but some people mention someone using the AC server itself to do stuff to you but I have no idea how that would happen.

My server, as mentioned, isn't public and can only be accessed from my home IP. I don't use a password for logging in, as I have set up SSH key authentication only.

Then I still say nothing to worry about. My realms have been running for almost 2 years using Oracle and isn't even set to only allow my IP and I have never had any issues.

Probably, a good provider with decent systems in front of the server helps to spare customers from such trouble. I hope Hetzner is one of them :=)

I have never even seen anyone try to do anything to my servers but that's on a per-user basis. If they don't know to look for your stuff, they usually don't find it just like that.
