Locally you can have Windows, carry out all the tests you want, and when you know that everything works, just there, you upload it to the server.

Instead of running SQL or editing the fields by hand, you can create scripts, which serve as documentation or in case you need to revert any changes.

The reality, too, is that there are many servers, who do things just like that, and it works well for them. But the more neat you are, the fewer problems you will have.
