using MySQL Community Server 8.0.36
and I also have the xampp version of mysql
Not sure which one I used tbh, I just wanna know how to change the exe in the server's config
I tried from authserver.conf but it didn't work

You don't change the executable, you'll have to change what's defined in cmake and recompile - and also make sure to copy the correct dlls
