If I understand correctly, your goal is that you would not like to have the profession changes or the mana changes - you'd like to use the 3.3.5 values for both of these. To accomplish that, you should just avoid the optional files and not run the SQL file that changes the mana costs. Unfortunately there is no way to isolate just some changes from the optional files. Profession changes and mana cost changes are both in Spell.dbc. I hope that helps!
