So I tried to create a talent (editing talent.dbc) and it makes the whole talent page bug out (only the created talent appears). Does someone have an idea why this happens?

I can move around existing talents, but once I create one, then it's armageddon

I couldn't tell you without knowing exactly what you've done, but in general you need to insert data in the correct location in the dbc, and not at the end of it or try to sort it

oh really, ok maybe then it's the new talent ID, which places it at the bottom of the list (although it is assigned to the right class spec tab obviously)
