I'm trying to edit stealth SpellID 1784 but I cannot locate it in the spell_dbc table, it just skips those numbers entirely. Any info available to explain this?

spell_dbc ist just an override or place for serverside spells which are not known by the client. You need to extract the data from the dbc files.

You can also modify using dbc overrides in cpp. See SpellInfoCorrections.cpp

Probably a dumb question but would I need to recompile if I use the .cpp method?

It doesn't require a full recompile, just so you're not wasting extra time.
