so having never played WoW before finding AC, I find my character (a 20th level Blood Elf priest) getting hammered pretty hard in the overworld during combat with level 15 mobs

my mana is exhausted quickly and I have to wait for it to fully recharge before fighting even one monster

You can always modify the mana regen speed or your total mana in the database. Or cheat in some items to increase Int/Spirit
