You could technically add every dungeon map to the pool, however that will only apply the affixes to the creatures. Imagine like a scarlet monastery with harder difficulty, it will not increase the the creatures level, health, damage etc. For that I imagine to add HC to these dungeons, implement your heroic version of low level dungeons.
If you do that all you need is to add the pedestal creature (id 900001) close to the entrance of the dungeon and add the names, id‘s, final boss is, timer etc to `MythicBosses` inside `Mythic_Server.lua`.
You can also add custom dungeons to the list too.
I would also love to have all low level dungeons (classic + tbc) as a heroic version (lvl 80) on my server, but I don’t think I have the capabilities to balance the damage, health, etc
