Then the cat is just like, "Greetings, <player>" (cats can talk now - deal with it.) If I then go and get the quest and then talk to the cat.... the despawn works exactly as you'd expect. The cat fades out and you're done. No dead body. So it's as if the despawn has to be on an object that has some sort of quest or something else tied to it?

yeah, despawn or unsummon will despawn it after a set amount of time, and then it'll respawn using the settings in the creature template
