There have been a number of tests with playerbots but it's not like there's a document you can look at unfortunately. It's all reported in sections on the playerbots discord

The test is very hardware dependent, it's really best to run tests yourself if you want to know for sure what kind of performance can be expected.

BTW, for context, my first server I deployed in 2005 like I said cmangos, but I am a full stack dev for many many years, so I was bored these past 2 days and I just managed to get the azerothcore running on my server for testing.
Took me a full working day basically spreadout, had some issues with Ubuntu 20.04 (cause it's old) and with the extractors. I wanted them to work in case I need them, I saw the pre-extracted data meanwhile and it works, but could not make mmaps work.
