I tried taking out the exe. file that runs WoW with the MEF; only to get the typical "Wont run WoW" error.

Im just looking for somethign simple to go back and forth between my real race and my Edited Race.

However, it is quite easy. Simple delete the .MPQ file (or if you want to save it for later use, cut and paste it somewhere else for storage (My Documents for example). BTW cut is ctrl+x not ctrl+c
