https://github.com/AsgavinYT/azerothcore...kables-200 has worked great for me increasing the stack size. I have not seen it break anything. (just make sure you reaply it after remaking the world database or you will get lots of in game mails with the extra items that wont fit in your inventory anymore)

you can obviously modify it if you wanted higher than 200 stack count. best part, no clients changes
