Hello,
I've used Glitchy's MES to do a Human Male -> Undead Male, but the result was a bit buggy and some possible skin/hair/whatever combinations looked wierd (bones with human textures, etc). So being mr perfect that I am, I spent some time figuring what's wrong exactly, and fixing it. And so, I've got a perfect Human Male -> Undead Male, with all possible skin color / feature / hair / etc working, helmfix is also included (the one generated by Glitchy's MES though, so not my credit).
Some of you probably expected this to come with a jawfix aswell, and actually, I've got a DBC file with jawfix. It works perfectly when I import it to my MPQ and test it in wowmodelviewer. However, there's some issue with the model edit fix loader - it refuses to load up with my MPQ if the DBC file is there. There's no jawfix in the file I've uploaded now, but if the MEF issue gets fixed, I'll test it out and upload it aswell. Note: the jaws do work with some certain features/face/hair, it's about 50/50. With my DBC file it's 100%, shame it doesn't work : \
Another minor thing in this edit is that I change human hair textures, and they're applied to both female and male. Basically, you'll see human females with undead hair textures (not styles). Personally I think this is very minor, but if you don't like that, all I can say is: the choice is between having it like that, or having human hair textures applied to your character aswell (looks ridicilous, with undead hair styles). I prefer having it like that.

I think you should consider doing some other charachter from x to y as well. I do have a couple of suggestions as well. Just write back to me anytime. Really good job on this one.

I'll add my DBC edit to this as soon as MEF will start loading with it, as of now it just crashed if the DBC file is present in patch-x.MPQ. It's a known issue; I've read somewhere here about it in one of the 'official' threads.
Oh and the size thing, this just really depends on what race to race you're doing. I've done Human Male and Night Elf Female to UD Male and never needed to do anything with runspeeds/shouldersizes/etc, but I know people having issues with that when they try to modelchange Taurens. I guess same would happen with Gnome.
I'd also like to say that I'm mainly doing this for myself. My main characters are Human Male and Night Elf Female, and I just love how UD Male looks, so I've done these two perfectly. I'm just sharing this with MMOwned. What I'm trying to say is, this is just sharing my own stuff and I won't be doing anything by request.
