I.e. if I wanted to change a tauren character to have the appearance of a night elf, would that break anything if I changed it in the database?

I think that the only part that client and server consideres the player faction is their race.
If Race A, B, C = Alliance, Race X Y Z = Horde.
How they look (visually) I think is something exclusive client side. If you change / patch the client for a tauren look like a night elf i dont think it gives issues server side but it's a question better asked in the modding community (check the pinned comments here)

Ah, so it is tied down, thats cool, was more a just wondering if I could change the value without breaking it, but it's not super important I can leave it as is
