I am using master looter and they are looting it but we aren't sharing it - maybe I am misunderstanding the module? I was hoping that if 1x meat is looted from the corpse, everyone gets 1 piece of meat for the quest

They still have to loot it themselves. The module just makes it so that everyone can loot it instead of just one person.

Oh so in that case in a 5 man group, 0/8 means we need a total of 8x5 quest items, therefore killing many many mobs

No, it means you need 8 drops in total because everyone can loot it at the same time each time it drops. However, playerbots sync quests with the player (if we're talking about that) so they don't actually need to complete the quest to turn it in when you do - if it's completed for you, it's automatically completed for them.
