It is HIGHLY unlikely that you will get caught unless you use Model Editing to somehow give yourself an advantage in gameplay over others (in which case people might notice it and report it)
I am not very clued up when it comes to Model Editing and have never done it myself, however I know it is extremely popular and haven't heart many people at all ever getting banned for it. I'm sure some more members who are more familiar with it will be able to give you their 2 cents as well on this topic.

It's client-side, so when it comes to a small change, unless you're running third party software alongside it, or you tell someone, they won't. They don't spontaneously check your models, Warden hasn't done that for a long time. A large models swap such as turning LM flag into a Fel Reaver would stand out, but still not too likely unless someone caught you and reported it.
